Luckily, there's a method to cancel and reinitiate the attack chain known as tap-cancelling. Essentially, this will result in Beidou being able to only use the 1st + 2nd hits in her combo and Kaeya being able to only use the 1st - 3rd hits in his combo.

In order to successfully tap-cancel, a player must quickly tap two movement keys (double tapping works as well) after the animation for Beidou's 2nd hit or Kaeya's 3rd hit finishes, then immediately the player can reinitiate the attack combo by clicking. Personally, I like to use d+w or w+d (insert reference to how this smooths your attack combo like applying wd-40 here).

For those with boomer hands, it doesn't hurt to tap movement keys any number of times (just spam movement keys if you can't get the timing, lol). To learn the timing, a key tell that you can reinitiate the combo is when your character "nudges" out of their combo. Below is a video displaying the normal attack combos and the tap-cancel'd combos in action.

To discuss more as to why this is something someone might care about: despite her relatively average normal attack talent%s Beidou at c4 acquires the ability to deal an extra 20% atk per hit (this is essentially a crescent pike passive), thus being able to deal more attacks adds significant value. Kaeya, on the other hand, has the highest normal attack talent%s when compared to other one-handed sword users, but his dps is hindered by his slow combo.

I've only tested this on Beidou and Kaeya, so I'm unsure as to whether or not there are more characters that can perform the same cancels (presumably Xinyan and Bennet can do it as they have very similar attack animations as Beidou and Kaeya respectively). Additionally, I have no idea if this is possible on mobile or console.
